This is the perfect breakfast for a cold autumn day

I love hot breakfast foods, pancakes being at the top of the list. It probably has something to do with the fact that hot breakfasts are usually made on Saturdays, and Saturdays are the best day of the week.

This recipe was a gamble, since it called for lots of eggs, but the veegetarian version turned out amazing! So put on a pot of coffee and get ready for pancake bliss.

Here’s what you need:

  • 3 Tablespoons EarthBalance
  • 2 Tablespoons Agave Nectar
  • 1 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 2 pears  (or apples) peeled, cored and sliced
  • 3 Flax eggs (3 Tablespoons flaxmeal mixed with 9 Tablespoons water)
  • 1/2 cup rice or soy milk
  • 1/2 cup stone ground whole wheat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Pure maple syrup for topping
  1. Preheat your oven to 400 degrees. In a large oven-proof skillet melt the earthbalance over medium heat. Add the agave nectar, cinnamon, nutmeg, and pears. Saute until slightly tender, about 5 minutes.
  2. In a medium bowl whisk the flax eggs, rice milk, flour, baking powder and salt. Mix until fully combined. Pour over the pears. Put the skillet in the oven and bake about 18 minutes.
  3. Cut into wedges and top with maple syrup.
