This is one of those recipes that you just have to try. Who knew that a simple combination of beans, vital wheat gluten, nutritional yeast, vegetable broth and spices could turn into perfectly shaped sausages with real sausage taste and texture. It’s some kind of miracle…

Here’s what you need:

  • 1/2 cup cooked navy beans, drained and rinsed
  • 1 cup vegetable broth
  • 1 Tablespoon olive oil
  • 2 Tablespoons soy sauce
  • 2 garlic cloves, grated on a micro plane
  • 1 1/4 cups vital wheat gluten flour (found in the bulk section of health food store)
  • 1/4 cup nutritional yeast (also found in the bulk section of health food store, or purchase in canister)
  • 1 teaspoon cumin
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • a few dashes of salt and pepper
  1. Set up your steaming apparatus and get the water to a full boil. Place 4 pieces of tin foil out, this will be used to wrap each sausage.
  2. In a large bowl mash the beans until no whole ones are left. Add the rest of the ingredients, in the order listed and mix well with a fork.
  3. Divide dough into 4 pieces, shape each piece into a 5″ log and wrap each in tin foil like a tootsie roll. Place the wrapped sausages in the steamer and close the lid.
  4. Steam for 40 minutes. You’re done! Now either eat as is, slice and saute, grill it whole, or refrigerate for later.

Tip: If you aren’t using the sausages right away then put them in the fridge to prevent them from drying out and losing their awesome sausage consistency.
